A new small-batch bakery and coffee shop, Butter, has opened in downtown Jersey City. The spot is located at 156 Brunswick Street, near the corner of Brunswick and Fourth Streets. Butter is the newest venture from Hybrid Coffee owner and Jersey City local, Evan Santiago. The latest addition will have the same coffee options as Hybrid Coffee, roasted in-house. The space was previously occupied by fellow coffee-roasters, Rabble & Lion. Read on to learn more about Butter, the newest concept from Hudson County local, Evan Santiago.
Branching Off To Bread + Butter
Evan Santiago has been dreaming of Butter for years. Evan currently owns Hybrid Coffee located at 398 Manila Avenue in downtown Jersey City with a Heights location on the way. Hybrid Coffee started out as a completely mobile coffee cart, serving drip coffee, espresso drinks, lattes, and hot chocolate. It now has a brick-and-mortar storefront, with an expanded menu including breakfast, baked goods, and smoothies.

Hybrid’s menu would only be the beginning of Evan’s expansion into baked goods as a fully self-taught baker and brewer. Hoboken-born and Jersey City-raised, Evan shared with The Hoboken Girl that he is proud to be a Latino business owner in Jersey City’s diverse community, which shaped him as a person, baker, and someone building community. “I’m just growing where I’m planted,” he told The Hoboken Girl.
Evan described Butter as “A small-batch bakery celebrating global pastries inspired by my travels and my childhood — Spanish, Italian, Swedish, French influences, just to name a few.” Evan continued that the bakery’s diverse inspirations can be seen in the menu variety, including viennoiserie, specialty doughnuts, Swedish cardamom buns, orange olive oil loaf, Irish folded scones, and more.
The Space
Evan described the space as a “mini pastry museum” with pops of color and wall illustrations, showcasing pastries in display cases and a feature wall with doughnut-style lights. The space was previously occupied by coffee-roasting company Rabble & Lion, of which Evan says Butter is “honored to carry the torch forward.” Rabble & Lion quietly closed earlier this fall, as neighbors noticed an announcement on the front door in September.
