New Coffee, Waffle, + Crepe Shop, Little Mingo, Opens in Hoboken

Hoboken residents love a good coffee shop. After all, we have dozens that fill the streets of the Mile Square. Back in April, The Hoboken Girl caught wind of another new coffee, waffle, and crepe shop preparing to open in the former Sub Master location at 305 1st Street in Hoboken. Now, four months later in August, The Little Mingo has opened its doors. Here’s everything we know about the new spot called Little Mingo in Hoboken, New Jersey.

About Little Mingo

The Hoboken Girl received a tip via DM from a reader back in April who spotted a pink sign posted on Sub Master’s papered window. The sign indicated that a new coffee, crepe, and waffle bar named Little Mingo (like a flamingo) would be coming to the space. In July, the Little Mingo team shared with HG that the new spot was taking steps towards opening “very soon,” with new signage up in the space.

As of August 2025, Little Mingo, serving fresh brews, sweet treats, and “cozy vibes,” has opened its doors, offering a unique twist on the traditional coffee shop concept with its crepe and waffle menu. The new cafe will host a Grand Opening Party on Sunday, August 10th. Little Mingo is promising “a fun day filled with crepe and waffle samples, complimentary drip coffee, DJ performance, good vibes, and a chance to connect with our community,” the team shared with HG.

Behind Little Mingo

The vision for Little Mingo all started with a dream to “open a cozy coffee shop that felt like home,” Owners Merve and Emrah shared with HG. “We waited patiently for the right time and the perfect place to make that dream come true. When the moment finally felt right, we pulled the trigger—and just like that, Little Mingo was born.”

The inspiration behind the business concept comes from the cafes of Paris, “where mornings begin with the scent of fresh crepes and warm waffles,” Merve and Emrah said. “We fell in love with that culture and wanted to bring a slice of it to Hoboken—infused with something uniquely ours.”

The name of Little Mingo draws from “a family thing,” the duo said. “Our sweet little niece couldn’t pronounce “flamingo” when she was younger—she called them “mingos” instead. That stuck with us. It was playful, memorable, and full of heart—just like our shop.”

Earlier this year, Hoboken residents took to Reddit to express sadness about their favorite sandwich shop, Sub Master, closing its doors, leading the conversation with “RIP Sub Master.” Locals spotted the “for lease” sign plastered across the storefront’s window, indicating that this was the end of an era. As of April, Sub Master is listed on Google as “permanently closed.” The sandwich shop was praised for its chicken parm sub, turkey provolone sandwich, and super soft breads. Sub Master opened in February of 2020 in the former Chill Convenience Store.
